It wouldn't surprise me if the producers haven't already considered this but how about a tournament of the best players who lost to Ken Jennings?

BTW, is it fair to assume Ken won't be paid until he loses?

correct, till Ken loses he cannot collect payment.

While the standard language gives the show up to 120 days to pay its players (no, I don't have my two thousand yet), there's also nothing to stop Jeopardy from paying Ken some of his money up front if they want to.  An advance, if you will.  Since he's been playing the good soldier in public appearances and whatnot, building up even more publicity for the show, it seems the least they could do.
