With so many responses on the rejected Wheel of Fortune puzzles thread, I might as well add some rejected Jeopardy categories.
Two I have thought of:
Drew Carey's for Showcases for $100
and
Springer Titles for $200

Bears with a Super Bowl and seven other NFL championships, Bulls with six NBA titles, Blackhawks with a (ok, so it was in the '60s) Stanley Cup, the Sox with their '05 World Series winner and if you want to go either AHL with the Chicago Wolves or go allllllllll the way back to the era of Der Sting (tm-Tim Weigel) with two NASL championships, you could fill a category. Forgot about that other team in Chicago. Hell of a museum to go to. ;)

They'd never do this, but I'd find a category of FAMOUS HOMOSEXUALS* interesting. Limit it to people who are openly gay (or, if deceased, were such during their lifetimes) and write it matter-of-factly, just as if it were FAMOUS TEXANS.
If there were enough material, I'd also like to see famous female dogs as a category.
* I chose the word because it unambiguously includes lesbians. The down side is that it's ambiguous whether it includes bisexuals. Either way, I'd simply advise the contestants beforehand and let the viewer discern it.
