1987-1988.

Probably because GSN wanted to mix up the seasons (1985-1986 for $25K and 1987-1988 for $100K), instead of making it seem redundant if they aired 1985-1986 for both shows.

Does anyone recall where GSN used to start the 1986-87 season? The show began new episodes in August, but ISTR that GSN started later than that.

Yes, they started with Teresa Ganzel & Howard Morton. GSN has leased for 3 different packages for that version of the show (1985-1986 has weeks #1-#38, 1986-1987 has weeks #39-74, and 1987-1988 has weeks #75-#110).

I have no idea how many different packages they have leased for the $25K version, but I have a feeling that it may be something like this:

1982-1983: 260 episodes
1983-1984: 250 episodes
1984-1985: 260 episodes
1985-1986: 255 episodes (?)
1986-1987: 300 episodes (?)
1987-1988: 95 episodes

The first new episodes of the third season started airing the week of August 17, 1987, with Lynn Herring and Paul Kreppel. It was about halfway through the tournament qualifying time.

They followed the same pattern every season: between four and five months of new episodes, followed by two weeks of repeats at Christmastime, then two months of new episodes, followed by a month of repeats in March, then all new episodes until early June, followed by two months of repeats. Then the new season would begin in mid-August. The only difference in the third season is that they saved their March break until April.

Well, apparently in this upheaval GSN's acquired season 22 of Jeopardy! as today's ep was the premiere...did I miss something? I thought GSN only had the rights to Season 20, Jennings Season 21, and the UTOC in its most recent package and figured they'd go back to the beginning of 20.

Well, seriously, 8 times out of 10 the contestant either buzzes in and answers outright, or buzzes in during the first answer.
I never watched season 1 a whole lot, but I can remember countless times where they show only the first answer, then someone buzzed in before the other two would show up, so you saw answer 1, and two blank spots. Looked kinda goofy, and it's really not that important to have it shown it on the screen anyway. Usually the questions are really easy, and who can't remember three possible answers?
