I've always wanted to know why sometimes, the host will do the contestant intros, on other shows, the announcer, or on some other shows, the hostess does it. Did it depend on the production company, or the producers decisions on who should do this?

Seems like production company. Goodson-Todman almost never had the announcers do it. Exceptions: Double Dare, I suspect because Johnny Olson had so little else to do, and TPIR, obviously a unique case. From the 70s on, Barry-Enright always did. Heatter-Quigley had the dealer or croupier do it if there was one.

Even within the production company it changed. Jeopardy has Johnny Gilbert do introductions, Wheel has Pat Sajak talk to the players.

Within that production company, yes. Reg Grundy changed it up, too.

A half exception, 70s Now You See It had Jack introduce the returning/acting champion but then Johnny O did the intros for the other 2 or 4 contestants. And for more variation on the same show, Johnny O's first intro of the day always had that little beginning "verse" of Chump Change play but when the switch to straddling occurred and Johnny did a new intro, the music was silent.

Wheel had Susan introduce the contestants before Chuck talked to them for about the first year and a half of the run before the decision was made to just let the host do it all.

I want to say Elaine Stewart introduced the couples on Gambit.

And, of course, the announcer initially introduced the families on "Family Feud" until recent incarnations...

I just skimmed through a couple of episodes, and it looks like Elaine, Wink, and Kenny took turns introducing the couples. I think the hostess on Las Vegas Gambit (Lee Menning?) introduced couples.

That's what I remembered, too, at least at the top of the show. She'd also have her weird conversation with us folks at home.
Ruta introduced her players, and on The New High Rollers, the model escorting them in did it. Karen the model introduced the couples on $1,000,000 Chance of a Lifetime.

Roxanne or Beverly would introduce many of the couples on the Collyer Beat The Clock.
